Vegetarian Options: Morningstar Farms

Lately, I've been on the meat-free kick for weeks at a time (gotta have some chicken every now and then!).  The most difficult challenge is getting enough protein.  I'm still working on perfecting various tofu dishes (I'm still struggling with the texture of it, especially if it's the "ground meat" kind), but I do enjoy my Boca burgers, the Indian burgers from Trader Joes, Morningstar Farms dishes and there's one more that I can't remember right now. The breakfast options are also quite tasty!

The other day, I had the lasagna dish for lunch (one of my favs!). I can usually find $1 off coupons online, so I end up spending $1.64 on each. Not bad! The one thing you have to watch is the amount of fat, saturated fat, and other fats (the poly and mono) because sometimes the numbers can be a bit high.  Do any of you ever take a break and walk on the meat-free side of life?!?

    I have finally converted you to the dark side of no meat...lol. Remember that beans are extremely high in proteins & other nutrients. The summer is a great time to try out 3 bean salads, cold bean soups, etc. Also try quinoa...a high protein food

  3. @Mz.July26 You're a funny one! Lol. I enjoy my beans and nuts as well. Haven't tried preparing quinoa quite yet although I have purchased it.
